An important indicator of a wine’s quality is its aroma or bouquet. The aroma is not based on one specific substance, but rather the composition made up of a series of components, totaling to over 400 separate compounds. The substances responsible for the grape’s aroma are mainly found in the grape skin and layers of pulp that follow. They are part of terpene alcohols, which, along with their derivatives, form the basis of the so-called essential oil of grapes.
